How to Cook Breaded Eggplant in an Air Fryer

To make breaded eggplant in an air fryer, you’ll need an air fryer, one medium eggplant, one large egg, one cup of Italian-style breadcrumbs, one teaspoon of Italian seasoning, one tablespoon of olive oil, and salt and pepper to taste.
Preparing the Eggplant
Start by preheating your air fryer to 350 degrees Fahrenheit. Then, cut the eggplant into 1/4-inch slices. To ensure the eggplant cooks evenly, sprinkle the slices with salt to remove some of the moisture. After 15 minutes, rinse the salt off the eggplant slices with water and pat them dry.
