How to Cook Breaded Eggplant in an Air Fryer
What You’ll Need
To make breaded eggplant in an air fryer, you’ll need an air fryer, one medium eggplant, one large egg, one cup of Italian-style breadcrumbs, one teaspoon of Italian seasoning, one tablespoon of olive oil, and salt and pepper to taste.
Preparing the Eggplant
Start by preheating your air fryer to 350 degrees Fahrenheit. Then, cut the eggplant into 1/4-inch slices. To ensure the eggplant cooks evenly, sprinkle the slices with salt to remove some of the moisture. After 15 minutes, rinse the salt off the eggplant slices with water and pat them dry.
Breading the Eggplant
Next, set up a breading station with a shallow bowl or plate filled with the breadcrumbs, Italian seasoning, and salt and pepper. In a separate bowl, beat the egg. Dip each eggplant slice in the egg and then in the breadcrumb mixture, making sure each slice is completely coated.
Cooking the Eggplant
Once the eggplant slices are breaded, place them on the air fryer basket and drizzle each slice with olive oil. Cook the eggplant for about 10 minutes, flipping them halfway through. When the eggplant is cooked, it should be golden-brown and crispy on the outside.
